I created this dessert for Kay, because he loves the combination of sweet caramel
and salt *.*
Salted Caramel Pudding

Ingredients:
8 chocolate biscuits
3 tbsp butter
1 pinch of salt
500 ml milk
40 g corn starch
60 g sugar
1 pinch of salt
200 ml evaporated milk
6 tbsp brown sugar
75 g salted butter
Method:
For the bottom layer crumb the biscuits and mix with a pinch of salt.
Melt the butter und mix with the biscuit crumbs. Press into 4 dessert glasses.
For the caramel pudding mix the starch with a bit milk well. Now caramelize the sugar in
a pot. Be carefull that the sugar does not get to dark! It should get a light brown colour.
Now add the milk, the caramel should get hard now. Cook the milk with the caramel on low
heat until the whole caramel is melted and combined with the milk. It'll take a while, don't worry.
Now add the starch-milk and let the pudding cook for a few minutes until it gets thick.
Fill the pudding over the 4 cookie crumbs in the glasses.
For the caramel sauce let the salted butter melt in a pot. Add the brown sugar and combine
with the butter. Then add the evaporated milk. Let it cook until you get a thick brown sauce, this
will take a while again. Fill the sauce over the puddings.
Put the puddings in the fridge for a few hours.
Serve with cream and chocolate sprinkles on top.
