Rezept vom 22.07.2013: Easy, vegan, low fat Vanilla or Chocolate Cupcakes

Today I'm gonna give you an easy recipe to make vegan Cupcakes which are also low in fat, not to sweet, but stil tasty.

I got the recipe for the dough out of my new book:

 
I just added some apple cider vinegar, because I think it's good for every vegan Cupcake!
If you are not vegan, you may use normal yogurt and milk as well.
 
Ingredients:
1/2 cup vanilla soy yogurt
2/3 cup vanilla or plain soy milk
1/4 cup unsweetened applesauce
3 tbsp canola oil
3/4 cup granulated sugar
1 1/4 cup all-purpose flour
2 tbsp cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1 tbsp apple cider vinegar
1/4 tsp salt
1 1/2 tsp vanilla extract
 
For Chocolate Dough:
replace 1/4 flour with 1/4 cocoa
you may also replace the vanilla extract with e.g. chocolate or hazelnut, if you like it
 
Method:
Preheat oven to 350 and line a muffin pan with cupcake liners.

In a large bowl, whisk together yogurt, soy milk, applesauce, oil, vinegar, sugar and vanilla. Sift in flour, cornstarch, baking powder, baking soda, and salt, and mix.

Fill the cupcake liners three-quarters full. Bake 22 to 24 minutes until a knife or toothpick inserted through the center of one comes out clean. Transfer to a cooling rack to cool completely.

 
For the Frosting:
This recipe is not out of the book, because I prefere to make a lighter frosting with pudding.
 
Ingredients:
1 package vegan instant vanilla oder chocolate pudding mix
350 ml plain soy milk
2 tbsp sugar
150 g vegan margarine
30 g powdered sugar
1 pinch of salt
some food colouring, if using vanilla pudding and if you like it
 
Method:
Cook the pudding as required but with only 350ml soy milk and 2 tbsp sugar.
Let it cool completly.
As soon as the muffins and the pudding are cool, beat the pudding together with the margarine, powdered sugar, salt and food colouring.
Fill in a piping bag and arrange on the muffins.
 
I made some Chocolate and Banana Chocolate Cupcakes, using that frosting!
I also tried a Banana Frosting, using banana juice instead of soy milk <3
